Coconut Cherry Drops


  • 1 cup flour
  • tsp. Baking powder
  • tsp. Salt
  • cup butter
  • cup shortening
  • cup sugar
  • 2 egg
  • tsp. Vanilla extract
  • cup chopped maraschino cherries
  • 1 cup shredded coconut
  • cup chopped pecans


  • Preheat oven to 375 degrees.
  • Sift together flour, baking powder and salt.
  • Cream together butter, shortening and salt.
  • Ass egg and vanilla.
  • Beat well
  • Blend in dry ingredients gradually and mix thoroughly
  • Add cherries, coconut and pecans and mix well.
  • Lightly grease baking sheets (not necessary if using non-stick sheets)
  • Drop by rounded teaspoonfuls onto baking sheets
  • Flatten slightly.
  • Top each cookie with a quarter maraschino cherry.
  • Bake for 10-12 minutes.

NOTE: Makes about 2 1/2 dozen cookies (I always double or quadruple!)
