German Potato Pancakes

Ingredients:

  • 2 Cups grated raw potatoes, peeled
  • 3 eggs beaten
  • 2 Tbsp. flour
  • ½ tsp. salt
  • 1 Tbsp. grated onion


Instructions:
  • Chill grated potatoes in ice water.
  • Drain and dry on paper towels.
  • Add eggs, flour, salt and onion.
  • Shape into patties about 3 inches in diameter.
  • Brown each side until crisp in ¼ inch hot oil.
  • Serves 4
