German Potato Pancakes
- 2 Cups grated raw potatoes, peeled
- 3 eggs beaten
- 2 Tbsp. flour
- ½ tsp. salt
- 1 Tbsp. grated onion
- Chill grated potatoes in ice water.
- Drain and dry on paper towels.
- Add eggs, flour, salt and onion.
- Shape into patties about 3 inches in diameter.
- Brown each side until crisp in ¼ inch hot oil.
