Lemon Curd

Ingredients:

  • 4 TBS sweet butter
  • cup white granulated sugar
  • cup fresh squeezed lemon juice
  • 4 egg yolks from medium sized eggs
  • 1 TBS lemon zest


Instructions:

  • combine all ingredients except zest into sauce pan.
  • Using wooden spoon (not metal) stir over very low heat. Do not allow mixture to boil
  • Continue to heat until the back of the wooden spoon is coated with the mixture
  • remove from heat and pour into a jar or serving bowl. Stir in lemon zest
  • cool
  • Serve over scones, biscuits or soda bread
