Melon Ball Salad
- 8 ounces plain yogurt (non fat is fine)
- ½ TBS. Ground ginger
- 1 TBS. Lime juice
- 1 tsp. Lime zest
- 2 tbs. Honey
- 4 cups melon balls(combine different kinds and colors)
- 2 TBS. Finely chopped crystallized ginger.
- Strain yogurt through coffee filter or cheesecloth, preferably overnight.
- Combine yogurt, lime, lime zest, ginger and honey.
- Pour over melon balls and toss gently.
- Sprinkle with crystallized ginger.
