Bean and Tomato Salad
Ingredients:
- 1 (15 ounce can) white beans, drained and rinsed
- ½ cup red onion, chopped
- ½ pound tomatoes, seeded and diced
- 1/3cup chopped parsley
- 2 TBS lemon juice
- 1/2 tsp. each basil, thyme, and oregano
- 1/4 tsp. black pepper
- 2 TBS olive oil
Instructions:
- Combine all ingredients; toss gently to mix.
- Chill until ready to serve.
