Watermelon and Red Onion Salad
Ingredients:
- 1 red onion, sliced in rings
- 8 cups of watermelon chunks
- 2 lbs of mixed salad greens
- 1/3 cup raspberry puree
- 1 TBS shallots, finely minced
- 1/3 cup raspberry vinegar
- 2 tsp. Honey
- Salt and pepper to taste
Instructions:
- Mix the raspberry puree, shallots, vinegar, and honey.
- Add salt and pepper to taste.
- Stir in the red onion rings.
- Make a bed of the greens.
- Layer the watermelon chunks over the greens.
- Pour the raspberry vinaigrette over the salad. Serve immediately.
