Lemon Curd
Ingredients:
- 4 TBS sweet butter
- ½ cup white granulated sugar
- ½ cup fresh squeezed lemon juice
- 4 egg yolks from medium sized eggs
- 1 TBS lemon zest
Instructions:
- combine all ingredients except zest into sauce pan.
- Using wooden spoon (not metal) stir over very low heat. Do not allow mixture to boil
- Continue to heat until the back of the wooden spoon is coated with the mixture
- remove from heat and pour into a jar or serving bowl. Stir in lemon zest
- cool
- Serve over scones, biscuits or soda bread
